I got bored while recovering from pneumonia and avoiding the cold…

…so I actually made one of those recipes you see on facebook.  I made homemade Pumpkin Bread.  And it has a whole cup of sugar in it.  And I don’t care at the moment.  It smells amazing!  The batter was amazing!  (Yes, I lick the bowl!)  So I will share the recipe with you in case you happen to have all the ingredients for it at your house too.  Stay warm, people!


1 cups white sugar
3/4 cups vegetable oil
1 teaspoon vanilla extract
1 cup canned pumpkin
1 tablespoon of pumpkin pie spice
3 eggs
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
1 cup chopped (walnuts) OPTIONAL

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9X5 Loaf pan. Sift together the flour, baking powder, baking soda, pumpkin pie spice, salt and cinnamon. Set aside.
In a large bowl combine sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a time. Gradually beat in flour mixture. Stir in nuts.
Pour batter into prepared 9×5 inch pan.
Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
